We set goals and policies to reduce energy and water consumption, catalyze our progress and review our performance. We also collaborate with suppliers to provide products that conserve energy, reduce and divert waste and are comprised of more sustainable materials. We encourage sustainability in our kitchens through actions such as purchasing organic and responsibly sourced food, planting herb gardens, sourcing cage-free eggs and sourcing seafood caught in a sustainable manner and recycling cooking oil.
